Abstract :
Formalin is not permitted for food preservative because it is toxic for human. The aim of this study was to determine the illicit additive of formalin in chicken meat which were taken from East Surabaya traditional markets. The number of samples were 100 slices of chicken meat which were taken from 15 markets in East Surabaya. Samples were collected from Pucang Anom, Manyar, Tambak Rejo, Pacar Keling, Gubeng Masjid, Indrakila, Sutorejo, Bratang, Kendangsari, Gebang, Keputih, Tenggilis, Pahing, Soponyono, and Rungkut traditional markets. Formalin in samples were detected by chromotropic acid in concentrated sulfuric acid as reagent, prior to determine quantitatively. Intensity of the violet-red color obtained was determined with spectrophotometry at the wavelength of 567.5 nm. Validation of this method showed that detection limit was 0.134 ppm and quantitation limit was 0.446 ppm. Linearity was obtained in the range of (0.395 to 1.581) ppm, coefficient correlation (r) of 0.9967 with regression line of y = 0.216x + 0.023. Recovery of formaldehyde in samples were (73.26 ± 8.01)% with KV of 10.93 %. This study obtained that formalin was not detected in all of the samples.
