Abstract :
Abstract: Good Manufacturing Practices describes the requirements that must be done by the domestic industry at the whole production chain from raw materials to final product. Fishery products are contributor of food poisoning cause in national. One of processed fishery products are crackers. “Deni - Deva” is one brand of processed crackers from marine products in the Center of Marine Products of Small and Medium Businesses, Sukolilo, Surabaya. The study design was observational descriptive. The purpose of this study was to identify the implementation of Good Manufacturing Practices in the manufacture of the processed crackers from marine products under the brand “Deni - Deva”. Selected crackers are sea cucumbers crackers. The process of making sea cucumbers crackers with brand “Deni - Deva” has not been appropriately implementing 8 (eight) aspects of Good Manufacturing Practices, is evident from the results of the assessment states that the implementation of Good Manufacturing Practices in the production process of sea cucumber crackers categorized bad (53.02%). Aspects which get poor value category and needs to be fixed is the aspect of design and production area facilities, maintenance of processing facilities and sanitation activities, as well as administrative recording and recall.
