Abstract :

Introduction: Antioxidant is compounds that can delay, inhibit or prevent the oxidation of lipids (membrane) or other molecules by inhibiting the initiation or propagation of a series of oxidation reactions by free radical compounds. One of the antioxidants’source is tomato plants; in which the antioxidant activity derived from lycopene, β-carotene and vitamin C. The purpose of  the study is to determine the differences in the antioxidant activity of acetone extracts of fresh tomatoes (tomatoes without heating process) and acetone extract of tomato paste (tomato with heating process). Method:This study use in vitro testing methods with DPPH scavenging assay to measure the ability of antioxidants to decrease the absorbance of DPPH using spectrophotometer. The parameter used is IC50, the concentration of the sample that able to cause absorbance of DPPH dropped half, that calculated by linear regression equation. Result:The IC50 acetone extract of tomato paste obtained from the test is 10439.396 ppm, equivalent to 260.98 mg of dissolved solids of acetone extract of tomato paste. While IC50 acetone extracts of fresh tomato is 7273.661 ppm, equivalent to 181.84 mg of dissolved solids of acetone extract of fresh tomatoes. Conclusion: The lower IC50 values ​​of acetone extract of fresh tomatoes means, the higher antioxidant activity.
