Abstract :
Lemuru is one type of fish used as canned fish. Lemuru canning production effort is one way of preserving lemuru fish in hermetic cans and sterilized with heat. The purpose of this Practice Field is to acquire the knowledge, skills and work experience as well as to know the obstacles or problems in the implementation of Good Manufacturing Practice (GMP) and Sanitation Standard Operating Procedure (SSOP) in the canning production process of lemuru fish (S. longiceps). Practice Field was conducted at CV. Pacific Harvest, Muncar district, Banyuwangi regency, East Java on January 14 th 2013 up to February 14 th 2013. Working method used in this Field Internship is descriptive method of data collection included primary and secondary data. In the implementation of Good Manufacturing Practice (GMP) in the canning process of lemuru fish (S. longiceps) in the CV. Pacific Harvest grouped in three aspects: raw materials, supporting materials and additional material, and aspects of the stages of the production process.The canning process of lemuru fish (S. longiceps) using raw materials derived from Indonesia marine suppliers and imported from India, Pakistan, and China. Additional materials required in the canning process (S. longiceps) is an ice block, water, and chlorine used with the dosage was adjusted to the requirements set by the government and export destination (buyer). Stages of the canning process of lemuru (S. longiceps) include receiving raw materials of lemuru fish, first washing process, cutting, second washing, filling, checking, pre-cooking, medium filling, seaming, can washing, retorting, cooling, wipping, incubating, and labeling. In the application of Sanitation Standard Operating Procedure (SSOP) in the canning process of lemuru fish (S. longiceps) in the CV Pasific farvers, there are 8 aspects: water or ice security, condition of food contact surfaces, prevention of cross-contamination, worker hygiene, prevention or protection of adulteration, proper labeling and storage of additional materials, supporting materials and hazardous toxic materials, employees health control, pest eradication.
