Abstract :

The mud crab (Scylla serrata) is one of fishery commodity that has ahighly economic value. Mud crab has a fairly high cholesterol contents, thus affecting consumer to consume products that are less good for health. Chitosan is the result of purification of waste mud crab shells through the process demineralization, deproteination and deacetylation that have properties to reduce cholesterol contents. To reduce the levels of cholesterol contents in crab meatthus it needs the addition of chitosan in trash fish the mud crab. The research aims to determine the addition of chitosan in trash fish on cholesterol contents and growth of mud crab (Scylla serrata). The completely randomized design (CRD) experimental design with six treatments and four replications was employed. In this research, the amount of chitosan given in the trash fish feed were: A (0%), B (1%), C (2%), D (3%), E (4%), and F (5%).The parameters measured were cholesterol contents in meat and growth of mud crabs. Data were analyzed using analysis of variants (ANOVA) and continued by Duncan's Multiple Range Test. The addition of chitosan in trash fish for 30 days give a significantly different (P <0.05) of the cholesterol contents of mud crab, while was not significantly different (P> 0.05) of growth the mud crab.The best reduce of cholesterol contents obtained in treatment D was 19.26% without affecting to the growth of mud crab. Water quality for 30 days culture of mud crab were temperature range 26-30 °C, pH range 7-8, dissolved oxygen range 4-6 mg/l, salinity range 25-26 ppt, and ammonia range 0-5 mg/ l.
