Abstract :

The aim of the study is to find the condition of appropriate treatment to yard long bean with pH variation 4; 7 and length of boiling time to gain the highest haemoglobin regeneration efficiency’s Rattus norvegicus at diet high in dietary fiber, and based on investigation iron binding by dietary fiber macromolecules. The finding of the present study showed that decreasing pH and increasing boiling time will increase haemoglobin regeneration efficiency, due to the changes of iron binding pattern through decreasing Keff and Kads. The highest of haemoglobin regeneration efficiency at raw-pH 4 treatment,due to function of enhancer substances on iron non heme absorption. Iron binding pattern by dietary fiber macromolecules through formation of complex compound was more prominent than physically adsorption, involving two types of spesific binding sites, one of which showed a higher affinity.
