Abstract :

The aim of the study was to know the protein content before and after bleaching during the storage process with hydrogen peroxide on Euthynnus affinis. Protein content was known from interaction between hydrogen peroxide dosage and time of storing process. The research was designed in randomized complete block design with factorial. The first factor was hydrogen peroxide bleaching, and the second was storing time. The data were analyzed by analysis of variance and was continued by LSD (Least significant difference).
