Abstract :

One disadvantage of fishery products as a source of food is decreased of fish quality after catched. After the fish were cacth or harvested must be immediately preserved by frozen. Effort to maintain the freshness of the fish and durability decay in a certain time that can be done by storing in cold storage as a freezer. The goal of this Field Work Practice is to knowing the technique of Whole Round freezing by using Air Blast Freezing (ABF) method and Surimi using Contact Plate Freezing (CPF) and the problems that arise in the method of freezing the ABF and CPF. This Field Work Practice was implemented at in PT. StarfoodInternasional, KandangSemangkon, Lamongan, East Java. This program was held in January 27th until Feburary 24th 2013. The type of methods used in this field work practice was descriptive method.             Freezing technique by using ABF method on Whole Round(WR)  product in PT. StarfoodInternasional consists of some steps there are material procurementof raw materials, raw material receiving, first washing, selection by doing organoleptic test, weighing, second washing, arrangement on the long pan then kept to the ABF machine. After it was issued for frozen fish glazinging (immersion in cold water), followed by packaging (packing), storaging (cold storage) with temperature -25 0C, stuffing and shipment process.             Freezing technique by using CPF method on surimi product started by material procurement, acceptance, selection and continued by head part cutting. Fish then weighed and washed after that brought to the washing machine, mest separator, leaching machine III, leaching machine IV, dehydrator machine, Mixing machine and continued by freezing the surimi in CPF machine, packing, cold storage using freezing principle which is same with ABF reaches (until) the temperature of -250C, stuffing process and shipment.             ABF method used for product in a block form which often causes drying in the surface and ABF machine needs needs huge space so that the arrangement of production media (room) is necessary to be noticed in order to be efficient for all the process work. CPF method has problems related with the handling time and air infiltration besides that ammonia leak at CPF machine often happens.
