The condition of food handler’s higiene and canteen sanitation in senior high school 15 surabaya

Abstract :
Abstract: Canteen is a place which is provided by a school to fulfil student’s needs. Contamination can be existing in food when it’s not prepared well. This research purpose was to identification the hygiene of food handler, canteen sanitation, and the existence of E. coli bacteria in SMAN 15 Surabaya. This research was a descriptive study with cross sectional design. The sampling design use total sampling method. The variables of this research were the characteristic and hygiene of food handler, sanitation of producing place, facilities, infrastructures and the existence of Escherichia coli in tomato and chili sauce. The results of this research showed that the hygiene of food handlers, producing place, facilities and infrastructures sanitation had less than minimum requirements score 70. Existence of E coli showed that food samples taken has been qualified and didn’t found in examined samples. The conclusion is hygiene of food handlers and canteen sanitation of SMAN 15 is still needs adjustment to the requirements of Permenkes. 1096 Tahun2011 tentang higiene dan sanitasi jasaboga. This research recommends the training of food handlers on hygiene, sanitation and establishment of code of practice for food industry.
