Abstract :
Marine fisheries sector is one of the economic sub-sector with huge potential to be developed. The potential of Indonesian marine fishery resources sustainably amounted to 6.6 million tonnes per year with the catch of about 3.7 million tonnes per year. Cuttlefish is one that many fisheries commodities consumed. As animal food from the sea, cuttlefish excellence is almost all the edible parts of his body and contains complete nutrient. Field Work Practices have been implemented in PT. Alam Jaya Rungkut District, Surabaya Resident, East Java Province, on 18 July to 18 Agustus, 2011 and aims to determine the clotting process bekutak (Sepia officinalis) forms (whole round) with a air blast freezing of water method. Freezing bekutak at PT. Alam Jaya includes several stages, namely; receiving, quality grading, weighing, washing, layering, freezing, metal detection and glazing. And the last of stage are packing, labeling, storaging and stuffing before export the product to abroad. Freezing technique of cuttlefish (Sepia officinalis) using air blast freezer.
