Abstract :
The purpose of this study was to understand the occurrence and growth of yeasts in horse milk can possible cause desirable natural fermentations leading to the production of healthy important foods. Also may serve as a mechanism for incorporating probiotic of yeast (e.g. Kluyveromyces lactis, Saccharomyces serevisiae) into human diet. The results showed that the yeast populations greater than 104 cfu/ml were found in samples of retail and cavalry horse milks. The most predominant species isolated were Hansenula subpelliculosa, Candida tropicalis and Pichia etchellsii. The properties of yeasts influencing their occurrence and growth in mares milks were: fermentation/assimilation of lactose, glucose and galactose; and growth at 25C .
