Abstract :
The soybean meal (bungkil kedelai) is the waste product from soybean (Glycine max (L) Merill) processing, used for the protein source for animal feeding. Viewing from how the proccessing is done, the meal may still contain some antitrypsin compounds which in turn may affect the digestion of protein by trypsin. Antytripsin also called as antinutrive compound. To prove this problem, the experiment was done by testing antytripsin inhibitory activity of soybean meal extract at concentration of 3,5 – 15,0 % against 100 ppm trypsin activity with 300 ppm BAEE as substrate . The extract soybean meal showed the decrease of the trypsin activity about 23,0 – 65,0 %, with the curve will be incrase as the increasing concentration of the extract soybean meal. It can be concluded that the soybean meal still contain the antitrypsin compounds which can inhibit the trypsin activity.
