Abstract :

Red rosella has been greatly known by community as the mix for boiled drink, syrup, natural coloring agent, and others. Purple rosella is not yet popular. Calyx of purple rosella can be processed into effervescent tablet which is consumed as antioxidant supplement. It will increase the additional value of calyx of purple rosella. The objective of research is to determine the formulation of the filtrate proportion of purple rosella and dextrin, and to understand the use of good dryer tool to obtain the best treatment of effervescent tablet with the best physical, chemical, antioxidant activity and organoleptical characters from purple rosella effervescent tablet. The best treatment is examined in vivo with MDA analysis. Research method is Complete Random Planning with two factors. Factor I comprises to three percentage levels of additional dextrin filler (b/v rosella filtrate), which are 40%, 50% and 60%, while Factor II involves three drying methods, which are cabinet- oven, electric-oven, and vacuum-oven. Each combination of treatment has three replications. Quantitative data are analyzed with analysis of variance (ANOVA) and followed by BNT test at trust levels of 5% and 1%. Organoleptic data are examined with sense test. Result of research indicates that additional filler material concentration and drying tool have obvious influence (α = 0.001 and 0.005) on pH, redness rate, antioxidant activity, antocyanin rate, dissolving speed and organoleptic character. The best treatment based on physical, chemical and organoleptical parameters is obtained from the combination of purple rosella effervescent tablet at 50% level and vacuum drying method. Result of MDA analysis shows that the best antioxidant activity is found at dose II 225 mg.   Keywords: purple rosella, effervescent, antioxidant, free radical
