Abstract :
Dumbo catfish (Clarias sp.) have a good production in Indonesia. Diversification product is important toincrease the selling catfish like dumbo catfish. Surimi is a diversified product that can be applied for dumbocatfish result of washed process to be repeated can eliminate most of the protein in surimi. Manufacture of surimiaims to increase the number of consumer demand for processed fish products, one of which is dumbo catfish.Quality makes determining the level of consumer preferences towards surimi apart from the nutrient content insurimi. Chitosan is applied as a coating can be used as an alternative to improve the quality of surimi. Chitosan isa substance that can be used as food coatings that is safe and can improve the quality of surimi. The objectivethis research to determine the effect of chitosan as a coating on the quality surimi of dumbo catfish (Clarias sp.)surimi and to determine the optimal concentration of chitosan solution as a coating on dumbo catfish (Clarias sp.)surimi. The method of research used is experimentally method by using completely random design (RAL) withfive treatments and five repetitions. Treatments which were used addition chitosan concentration of 0% (A0), 0.5%(A1), 1% (A2), 1.5% (A3) and 0.2% sorbitol without chitosan (A4). Parameters measured were the odor, color,taste and texture. The results were analyzed by Analysis of Varian (Anova) continued by Duncan’s MultipleRange Test. The results showed that the application of chitosan as a coating on dumbo catfish (Clarias sp.) canincrease on quality, which may increase the texture and color with the highest value obtained in treatment of A2(chitosan 1%) were not significantly different (p>0.05) with treatment of A4 (sorbitol 0,2%).
