Abstract :
This research was aimed to determine effectiveness of coconut shell liquid smoke as an antibacterial and preservation on chicken intestine. The methods used for this study was TPC (Total Plate Count) to count the number of total bacteria, this research consist of 6 treatments. P0 as the control, P1 (150 mL liquid smoke), P2(75 ml liquid smoke + 75 ml of aquades), P3(50 ml liquid smoke + 100 ml of aquades), P4( 30 ml liquid smoke + 90 ml of aquades), dan P5 (25 ml liquid smoke + 100 ml of aquades). The result showed that P1 gave the greatest difference among all treatments. Based on this result that the addition of Coconut shell liquid smoke had antibacterial effect toward the number of bacteria and was an effective preservative agent for chicken intestine.
