Abstract :
Ensilage product usually in pasta form. So, it is not palatable and difficult for storage and handling. Drying is one of alternative method for future preservation from product in pasta form to become meal product. Filler is ingredient with high ready avaliable carbohydrate can quick in drying process. To these, drying ensilage product from edible snail with rice brand as filler was done. The aim of the experiment is developing physical performance of ensilage product of edible snail (Acathina fulica). This experiment used completely random design with four level rice brand as filler ( 0, 10, 20 and 40% w/w). The tempetarure of drying was 550 C for producting meal product with water content 15%. Crude protein, extract ether, crude fiber, non nitrogen extract and water content for storage were parameters observed. The results that was significantly effects of filler to crude protein, extract ether, crude fiber and non nitrogen extract concentration of meal product (p< 0.01), but that was no significantly effects to ash (p>0.01). Water content of ensilage product meal with filler decrease more little than ensilage product without filler for storage. Drying ensilage product of edible snail with 10% rice brand as filler can produce edible snail meal with nutrition quality is the best.
