Abstract :
This experiment is conducted to compare the nutritive value of tofu waste-rice bran which was fermented with Rhyzopus microsporus var. oligosporus (AtDF) and fermented tofu waste-pollard with same starter (AtPF). In this experiment, tofu waste was mixed with rice bran (1:1); tofu waste was mixed with pollard (1:1); fermented with 0,5 % of Rhyzopus microsporus var. oligosporus starter, then were incubated at 27oC for 24 hours. The results showed that fermentation affected on increasing crude protein content, protein digestibility and decreasing fat content, crude fiber and ash content for both AtDF and AtPF. The change of AtPF was better than AtDF.
